Sweet and spicy salsa

Ingredients

  • 1 ripe papaya
  • 3 ripe mangoes
  • 1 orange
  • 3 jalapeño peppers
  • 1 1/2 tablespoons of fresh ginger
  • 1 cup (unsweetened) pineapple juice
  • 1 tablespoon of white or apple cider vinegar

Directions

  1. Peel, pit, and chop up the mangoes and papaya into bite size pieces. Peel, and remove the membrane, and chop up the orange.
  2. De-seed the jalapeño peppers and chop them up. Peel and mince the ginger.
  3. Combine all the ingredients in a saucepan and bring the mixture to a boil.
  4. Turn the heat down and simmer for about 20 minutes until the sauce begins to thicken.
  5. Serve hot or cold over you favorite fish, shrimp, chicken, or meat.

 

Note: To eliminate the oils on your fingers from cutting up chili peppers, first rub your hands through your hair. Then wash your hands in very soapy water.
