Ingredients
- 1 ripe papaya
- 3 ripe mangoes
- 1 orange
- 3 jalapeño peppers
- 1 1/2 tablespoons of fresh ginger
- 1 cup (unsweetened) pineapple juice
- 1 tablespoon of white or apple cider vinegar
Directions
- Peel, pit, and chop up the mangoes and papaya into bite size pieces. Peel, and remove the membrane, and chop up the orange.
- De-seed the jalapeño peppers and chop them up. Peel and mince the ginger.
- Combine all the ingredients in a saucepan and bring the mixture to a boil.
- Turn the heat down and simmer for about 20 minutes until the sauce begins to thicken.
- Serve hot or cold over you favorite fish, shrimp, chicken, or meat.
Note: To eliminate the oils on your fingers from cutting up chili peppers, first rub your hands through your hair. Then wash your hands in very soapy water.
